French Toast Bread Pudding

First off I will clarify that this is NOT my recipe. It came from the box of the Farm Rich brand of cinnamon French toast sticks. But it’s darn good!

OK you need:
1 1/2 cups of brown NOT packed brown sugar (I used Splenda baking brown sugar and it was fine…but use the full amount in the recipe, don’t reduce it like you normally would)

1 box of French toast sticks (Use either cinnamon or plain, depending on preference and what kind of fruit you add)

1 cup of heavy whipping cream

2 large eggs

1/2 tsp of vanilla extract

1/4 tsp salt

1/2 cup of water

Option is fruit…we used apples cut VERY small with cinnamon sticks. The recipe suggests banana, blueberry or strawberry with regular sticks. I think pears would be good too.

Process:
-Cut the toast sticks into 1-inch pieces.
-Layer the bottom of a 9×13 inch baking pan with the brown sugar.
-If you use fruit, layer it on top of the brown sugar.
-Lay the French toast pieces over the fruit (or the brown sugar if you don’t use fruit). Press any extra sticks into the side/corners.
-In a large bowl, mix the other ingredients
-Cover the toast sticks with the mixture, pressing the sticks down to make sure they are moist.
-Sprinkle 1/4 cup of white sugar over the top
-Bake at 350 degrees for 30-40 minutes. After baking, broil the top for a couple of minutes to brown the sugar.
-Let the pudding stand for about 10 minutes and when you cut it, invert it onto a serving plate.
